Christmas Cookie Recipes - Holiday Gumdrop Cookies

These cookies are filled with color and sweetness.

1 1/2 cups gumdrops

3/4 cup walnuts, coarsely chopped

1/2 cup golden raisins

1 3/4 cups all purpose flour, divided

1/2 cup shortening

1 cup packed brown sugar

1 egg

1/4 cup buttermilk

1/2 teaspoon baking soda

1/2 teaspoon salt

Directions

Preheat oven to 400 degrees.

Take out all of the black gumdrops and store for another use. Cut the remaining gumdrops into small pieces. Place gumdrops into a bowl. Add in the walnuts, raisins and 1/4 cup flour; toss to coat. Set aside.

In a mixing bowl, cream shortening and brown sugar. Add egg; beat in buttermilk, flour; stir into creamed mixture. Add gumdrop mixture and mix well. Chill for 1 hour.

Drop by rounded teaspoonfuls 2-inches apart onto ungreased baking sheets. Bake at 8 to 10 minutes. Let cool .

Makes 36 cookies.

1 cup packed brown sugar

1 egg

1/3 cup sour cream

1 3/4 cup salted cashew halves

Browned Butter Frosting

Preheat oven to 375 degrees.

In a mixing bowl, cream the butter and brown sugar. Beat in the egg, sour cream and the vanilla; mix well.

Combine the flour, baking powder, baking soda and salt; add to the creamed mixture; mix thoroughly. Fold in the cashews.

Drop by rounded teaspoonfuls onto greased baking sheets.

Bake for 8 to 10 minutes or until lightly browned. Let cool before serving.

Browned Butter Frosting

1/2 cut butter

3 tablespoons half and half cream

1/4 teaspoon vanilla extract

2 cups confectioners' sugar

Additional cashew halves, optional

Directions

In a saucepan, lightly brown the butter. Remove from heat. Stir in the cream and vanilla. Beat in confectioners' sugar until smooth and thick. Frost cookies. Top each cookie with a cashew half, if desired.

How to Make It

1 egg

1 instant pudding/small package

1/4 c oil

3/4 c bisquick

Combine all ingredients. Roll into balls and place on cookie sheet.
Flatten slightly. Bake at 375 degrees for 7-8 minutes.

1 lb cheddar cheese

1 lb breakfast sausage

3 c bisquick mix

Combine sausage, bisquick and grated cheese and mix very well. Form into 1 to 2 inch size balls. Place on un greased baking sheet and bake at 300 degrees for 25 to 30 minutes or until lightly browned. May be made ahead and frozen.

>> Bisquick Butterscotch Brownies

1 1/2 cups chopped pecans

1 box brown sugar

1 can coconut

1 stick butter- room temperature

1 teaspoon vanilla

2 cups bisquick® baking mix

4 large eggs

Mix all ingredients and bake in 9x13 baking pan. Bake on preheated 350f oven for 45 minutes. Cool on rack, cut while warm.

>> Strawberry Shortcake (Bisquick)

2 Pt strawberries -- sliced

2/3 c sugar

2 1/3 c bisquick

3 tb sugar

3 tb margarine or butter -- melted

1/2 c milk

3/4 c whipping (heavy) cream

Sprinkle strawberries with 2/3 c. Sugar; let stand 1
hr.

Preheat oven to 425 f.

Mix bisquick, 3 tb. Sugar, margarine and milk until
soft dough forms. Drop by rounded tablespoonfuls into
6 mounds on ungreased cookie sheet. Sprinkle with
sugar. Bake 10 to 12 minutes or until golden brown.

Beat whipping cream in chilled bowl until stiff.
Split shortcakes; spoon strawberries between halves
and over tops. Top with whipped cream.

High altitude: heat oven to 450 f. Decrease the 3 tb.
Sugar in shortcakes to 1 tb.

APPLE PIE POCKETS

Butter Cookie Recipe

1 pkg refrigerator pie crust
3 apples, peeled, cored, and thinly sliced
1/3 cup sugar
2 tbsps flour
1/2 tsp cinnamon
1/2 tsp nutmeg
2 tbsp butter
milk
1/4 cup sugar and 1/2 tsp cinnamon combined in a small bowl

Preheat oven to 400 degrees. Cut each circle of pie crust into four wedges. Mix together the sugar, flour, cinnamon, and nutmeg. Toss apple slices with the mixture in a medium sized bowl. Place 6 to 8 mixture-coated apple slices on half of the pie crust wedges. Dot with a bit of butter and fold pie crust over top of apples. Seal around the open side edges with a fork dipped in milk. Slit top with a knife in a few places to make air holes. Bush with a little milk and sprinkle with the cinnamon-sugar mixture. Repeat the process with the remaining wedges. Bake on a lightly greased cookie sheet until golden brown or about 15 to 18 minutes. Great served warm with ice cream.

APPLE FILLED OATMEAL COOKIES

This recipe is from an old community cookbook.

1 cup finely chopped apples
1/4 cup raisins
1/4 cup chopped pecans
1/2 cup granulated sugar
2 tbsps water
1 cup brown sugar
1 cup butter
2 eggs
1/2 cup milk
2 cups flour
2 tsps baking powder
1 tsp cinnamon
1/2 tsp cloves
2 cups oatmeal

Preheat oven to 375 degrees.

In a saucepan, combine apples, raisins, pecans, granulated sugar, and water. Cook and stir this mixture until thick and apples are tender, about 10 minutes. Set aside.

Cream the brown sugar with the butter then beat in the eggs. Sift together the flour, baking powder, cinnamon, and cloves. Add the dry ingredients alternately with the milk to the creamed mixture. Stir in the oatmeal. Set aside 3/4 cup of the dough. Drop by teaspoon onto cookie sheets. Make a small depression in each cookie and add a small amount of the apple mixture to the depressed spot. Top apple mixture with a small amount of the reserved dough. Bake for 10 to 15 minutes at 375 degrees until cookies are lightly browned.

Best Christmas Cookie Recipes - Peppermint Pinwheel Cookies

A zesty cookie that resembles a pinwheel.

3/4 cup butter, softened

Cookie Recipe

3/4 cup sugar

1 egg yolk

1 teaspoon vanilla extract

2 cups all purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon peppermint extract

1/4 teaspoon red liquid food coloring

Directions

Preheat oven to 350 degrees.

Prepare baking sheets with nonstick cooking spray.

In a large bowl, cream the butter and sugar. Beat in the egg yolk and vanilla. Couple the flour, baking powder and salt; slowly add to the creamed aggregate and mix well.

Divide the dough in half and add the passage and red food coloring to one section.

Place the red rectangle over plain rectangle and roll up tightly (jelly roll style), beginning with a long side. Wrap in plastic wrap. Refrigerate overnight or until firm.

Unwrap the dough and cut into 1/4-inch slices. Place 2-inches apart onto prepared baking sheets. Bake for 12 to 14 minutes or until set. Cool completely.

Christmas Cookie Recipes - Santa Face Cookies

Santa Claus pays a visit to your table in these delightfully cute cookies.

1 cup butter

Cookie Recipe

1/2 cup sugar

1/2 cup brown sugar

2 tablespoons milk

1 teaspoon vanilla extract

2 1/2 cups flour plus supplementary for rolling

Royal Packaged Icing Mix

Red food coloring

Pastel candy dots

Directions

Preheat oven to 375 degrees.

Place butter in a bowl and cream until nice and fluffy. Slowly beat in sugar and brown sugar until light and fluffy. Mix in the milk and vanilla. Add in flour; mix thoroughly. Chill dough for 1 to 2 hours or until it is easy to handle.

Work with 1/3 of the dough at a time and leave rest in the refrigerator until ready to use.

On a lightly floured surface, roll out dough to 1/4-inch thickness. Take a Santa shaped cookie cutter and dip it into flour, then cut out Santa faces. Place cookies on an ungreased cookie sheet.

Bake for 10 to 12 minutes or until just golden brown. Let cool on cookie sheet for 1 minute. Remove from cookie sheet and cool completely.

Prepare the royal icing agreeing to box directions. Color half the icing red and leave the other half the original color. Using a icing bag or plastic bag with a hole cut in it, pipe a red Santa hat on each cookie. Follow up with white icing for Santa's beard, eyes and hat pompom.

Place a candy garnish in the town of each white eye. Allow icing to set before serving.

Makes 18 to 24 cookies.

Directions

Using tongs, dip cookies in candy coating; shake off excess. Place cookie on waxed paper.

To decorate: Place two chocolate chips on one end of cookies for eyes. Place baking bits down middle for buttons. For arms, dip ends of two pretzel stick halves into coating; attach one to each side.

Let stand until hardened. Pipe nose and scarf with gel or frosting.

Makes 32 cookies.

Directions

Preheat oven to 350 degrees.

In a isolate bowl, integrate the flour and salt; Slowly add to creamed mixture.

Divide the dough into two sections. Tint one section red. Divide the dough into four sections. You should have two red sections and two regular sections. Cover and refrigerate for 1 hour.

Shape each section into a 9-inch log. Place one plain log next to one red log. Slowly twist the plain and red logs together and originate one swirled log. Repeat with the other two logs.

Cut each log into nine slices; roll each slice into a ball. Place each slice 1-inch apart onto an ungreased cookie sheet. Flatten slightly with a glass.

Bake 10 to 12 minutes, or until edges are lightly browned. Press a chocolate kiss candy piece into each cookie center, while cookies are still warm. Let cool.

Dark Chocolate Cranberry Oatmeal Peanut Butter Cookies

This is, hands down, the most astonishing cookie I have ever tasted! The name is a mouth full, but don't worry, you won't be able to say it anyway because your mouth will be full of the cookies! It's got everything you need for the perfect cookie, and it's still wheat free! It is full of antioxidants, protein, and good fats. I never understanding I would find a cookie that tastes as good as these that is still very healthy. Enjoy!

What you need:

Easy Peanut Butter Cookie Recipe

1/2 cup of Dark Chocolate Dreams All Natural Peanut Butter from The Peanut Butter Co. (available at Kroger)

1/2 cup of Kroger blended Raspberry yogurt

1/2 cup of packed Kroger Light Brown sugar

1/2 cup of egg whites

1 cup of oat flour (ground from whole oats in food processor)

1/2 teaspoon of vanilla extract

1/2 teaspoon of baking soda

2 cups of quick cooking whole oats

1 cup of sweetened, dried cranberries

How to make them:

Preheat oven to 375 F. Add dark chocolate peanut butter, yogurt, brown sugar, egg whites and vanilla to blender and mix until everything looks creamy. I use the whip setting on my blender. This should only take about a minute, if that. Mix flour and baking soda together in a bowl and then add the mixture from the blender. Mix well. Add whole oats and cranberries to the bowl and mix well. Scoop out rounded teaspoonfuls of batter and place on ungreased cookie sheet, about 2 inches apart. Bake about 15 minutes. Cool on baking sheets for a minute or two and then stop cooling on a baking rack. Make some batches and freeze the left overs (if there are any!) for a great wholesome snack.

My daughter and I love baking so when the holidays come we find it quite fun to originate a variety of cookies to have Christmas Day. We also love to give away as gifts to citizen that we are thankful for a box full Christmas Cookies.

So the Christmas Carols were on and the baking began. When the peanut butter and margarine are creamed together, add your eggs one at a time and mix well.

Next you will need to add the white and brown sugars. Mix these well and add the corn syrup, baking soda and vanilla and mix together. Then one cup at a time add your oatmeal. When well blended add your chocolate chips and m and m's. For variety you can do part butterscotch, white chocolate or peanut butter chips. You can also make the recipe more or less nutty by using crunchy or creamy peanut butter.

In a bowl, mix together the peanut butter, Splenda Brown Sugar Blend, and eggs; stir vigorously until creamy. Add the milk and vanilla. Stir until smooth; add the flour mixture, stirring until well combined. Stir in the chocolate chips.

Spread the dough evenly into the prepared baking pan; pat down smooth. Bake at 350 degrees for 15 minutes or until very lightly browned at the edges. Do not over bake; or your bars will be too dry. Remove from oven and let cool 10 to 15 minutes before cutting into bars.

Ingredients

Easy Peanut Butter Cookie Recipe

6 tablespoons salted butter

1 1/2 cups packed brown sugar

2 tablespoons water

2 cups (12 ounces) semisweet chocolate chips

2 eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 1/2 teaspoons baking soda

1 teaspoon salt

Filling:

2 1/2 cups powdered sugar

1/4 cup salted butter, softened

3 tablespoons milk

1/2 teaspoon peppermint extract

Hardware

Whisk

Medium sauce pan

2 x medium bowls

Cookie sheets

Mixer

Step 1: In a medium bowl, whisk together the flour, baking soda, and salt; set aside.

Step 2: In a medium saucepan, combine butter, brown sugar, water and chocolate chips. Cook and stir over low heat until chips are melted. Cool.

Step 3: Preheat oven to 350 degrees F.

Step 4: Beat eggs and vanilla extract into mixture.

Step 5: Gradually add the flour mixture until just combined.

Step 6: Drop by rounded teaspoons 2 inches apart onto ungreased cookie sheets.

Step 7: Bake for 10-12 minutes or until firm. Immediately transfer cookies to a cooling surface.

Filling:

Step 1: Combine filling ingredients in a medium bowl; beat until smooth.

Step 2: Spread bottom half of cookies with filling; top with remaining cookies.

Makes about 30 cookies.

German Cookies - My Favorite Recipe

This is my all-time favorite German cookie recipe. In Germany, these cookies are known as "Ausstecherle". Usually made at Christmas time, the dough is flexible enough to be used throughout the year, so why limit this delicious treat to just a few weeks out of the year?

At any household supply store or Christmas market, you can buy cookie cutters made of metal or plastic. Available in shapes such as stars, boots, Santa Claus and others, one can cut out figures from the dough. Look for seasonal figures such as rabbits, eggs for Easter, hearts for Valentine day or witches around Halloween and you have in this cookies a great homemade gift idea for holidays all throughout the year.

Easy Peanut Butter Cookie Recipe

This is the recipe for the dough, given to me by no less of an authority on cookies than my mother in law:

Ingredients:

500 grams flour

250 grams butter or margarine

250 grams sugar

2 large eggs

1 tsp rum

one package of vanilla sugar
(if unavailable, use vanilla extract and add slightly more sugar to the dough)

For the decoration:

2 egg yolks, whisked until foamy
colored sugar sprinkles or finely chopped almonds
cookie cutters in the shapes of your choice

1. To make the dough:

Bring the butter or margarine to room temperature to soften it. Cut the butter or margarine into small pieces and place into a mixing bowl. Beat until it is creamy. Add half of the sugar and continue beating. Add the rest of the sugar, eggs, vanilla sugar and rum. Continue beating. Add the flour a little at a time while stirring until a firm dough is formed. Once the dough becomes too firm for the mixer to handle, knead the dough by hand.

2.Directions for the figures (Ausstecherle):

Using rolling pin, roll out the dough to about a half centimeters (a fifth of an inch) thickness. Be sure to flour the surface you'll be working so that the dough doesn't stick.

3.Grease a cookie sheet, you'll be using it very shortly now.
Take a cookie cutter and cut out a figure. Place the cookie onto the baking tin. To prevent the cookies from sticking in the cutter, set a little flour aside in a dish and dip the cutter in flour in between cutting each cookie.

4.To decorate and bake:

Whisk two egg yolks, then brush the figures (Ausstecherle) with them. Decorate the Ausstecherle with coloured sugar sprinkles or finely chopped almonds.
Bake the Ausstecherle for about 15 minutes in a preheated oven at 175°C (350 F) on the middle rack.

This recipe makes enough dough for two or three baking tins (50 to 70 pieces), depending on size of your cookie cutters. The dough can be rekneaded and rolled out again until it's all used up.

PEANUT BUTTER BUDDIES

Easy Peanut

1 cup creamy peanut butter
1 cup butter, softened
1 cup firmly packed brown sugar
2/3 cup light corn syrup
2 eggs
4 cups all-purpose flour, divided
1 tbsp baking powder
1 tsp cinnamon
1/4 tsp salt

In a large mixing bowl, with mixer at high speed, beat peanut butter, butter, brown sugar, corn syrup, and eggs until smooth. Reduce speed and beat in 2 cups flour, baking powder, cinnamon, and salt. With a wooden spoon, stir in the remaining flour. Wrap the dough and chill for 2 hours. On a floured surface, roll out half the dough to 1/8-inch thickness. Cut with floured cookie cutters, shapes of your choice. Bake on ungreased cookie sheets at 325 degrees for 10 minutes or until cookies are lightly browned. Cool on wire racks. Decorate if desired.

Yield: About 2 1/2 dozen cookies.

APPLE RAISIN NUT COOKIES

2 cups flour
1 tsp baking soda
1/4 cup milk
1 egg
1/2 cup shortening
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1 cup brown sugar
1 cup raisins
1 1/2 cups chopped apples
1 cup chopped pecans or walnuts

Preheat oven to 400 degrees.

In a large mixing bowl, sift together flour and baking soda; set aside.

Put milk, egg, shortening, salt, cinnamon, nutmeg, and brown sugar into a blender. Blend until smooth. Remove mixture from the blender and add to the flour mixture. Mix well. Add the raisins, apples, and nuts to the mixture; blend well. Drop by teaspoonfuls onto a greased cookie sheet. Box at 400 degrees for 10 to 12 minutes or until lightly browned.

Note: As when shipping any food items, package well and ship to arrive timely.

Little Gram's Chocolate Chip Cookie Recipe - The Greatest of All Cookies

I love cookies. I love everything about cookies. I love the shape and the smell and the taste of cookies. I've eaten all kinds of cookies - store bought cookies, Christmas cookies, really BIG cookies, and cookies I baked myself. None, however, can compare to my Little Gram's Chocolate Chip Cookies - the greatest of all cookies.

These cookies are made with chocolate chips, crushed peanuts, brown sugar, shortening, flour, baking soda, and four eggs. All these ingredients are mixed together, molded into about 60 raw cookies, and baked at 400 degrees for thirteen minutes. Believe it or not, this simple formula makes the perfect chocolate chip cookie. They're practically a food group.

Easy Peanut Butter Cookie Recipe

To properly eat this circular blob of perfection, I perform the "Ritual of the Perfect Cookie." First, I get a large glass of milk. Then, I take the red, slightly dented cookie-filled tin and slowly remove the lid. Inside lay the precious delights. I look for the best one to eat first; its about an inch in diameter and speckled with chocolate chips and peanut chunks. Smiling, I baptize it in the milk and swallow it whole. I eventually consume as many as my mortal body can hold. This is my ritual for eating my Little Gram's Chocolate Chip Cookies.

When I am eating her cookies I taste sensations that I never dreamed possible. Waves of deliciousness orally enter me, spreading rapidly through my body, and I experience a burst of energy unknown to most humans. I feel as if I have a perfect body, perfect vision, and even perfect spelling. I am mentally and physically a better person, at one with the world. And that is after only one cookie!

It sounds as if I am exaggerating, and maybe I am...just a little, but my Little Gram's are the best darn cookie I've ever eaten. One ingredient of the cookie I failed to mention is also the most important: love. My great grandma's love gives the cookies shape, taste, character, and that's why Little Gram's Chocolate Chip Cookies - are the greatest of all cookies.

Little Gram's Chocolate Chip Cookies
4 eggs
1 lb of flour
1/2 lb of brown sugar
1 cup of chopped peanuts
6 oz. of chocolate chips
1/2 of shortening
1/4 tsp of baking soda
1/4 tsp of baking powder

Beat shortening then add sugar. When light and fluffy, add eggs. When fluffy add flour and beat. When it gets too heavy for beater add flour by hand. Add nuts and chips. Bake at 14 minutes at 375 or 13 minutes at 400 according to which is best for your stove. Makes approx 60 cookies.

Italian Wedding Cookies Recipe

I will be catering several weddings this spring, so I came up with my own version of Italian wedding cookies, after many trials, and a few errors to produce a delicate buttery cookie that is made with ground nuts. There are several different types of these cookies which include the Mexican Wedding cookies, often coated with a mixture of cinnamon and confectioners' sugar. The Russian Tea Cakes which can be made with ground hazelnuts, and Italian Wedding cookies which traditionally use ground almonds. All of them are delicious, and each recipe utilizes a different proportion of butter and flour. They are a very good suprise in you mouth, delicate little cookie. I would try all different types, or versions to figure out the one you like best.

These Italian Wedding cookies are buttery, delicate, and have a wonderful flavor. This is a very easy recipe to make, and they are worth the effort put forth for every cookie and crumble left.

Butter Cookie Recipe

Italian Wedding Cookies:

1½ cups unsalted butter

¾ cup confectioners' sugar

¾ teaspoon salt

1 ½ cups finely ground almonds

4 ½ teaspoons vanilla bean paste

3 cups of sifted all purpose flour

1/3 cup confectioners sugar for dipping

First, preheat your oven to 325 degrees if you have an electric oven and about 300 to 315 if you have a gas oven. Gas ovens cook much faster than an electric oven depending on the oven. If you have a convection oven I recommend turning the fan off if you can, it will burn the cookies before they are fully cooked.

First you will soften and mix the butter in a bowl, and you will sift and then add the ¾ cup confectioners sugar and salt to the butter. You will then mix the butter, and sugar with salt mixture until it is light and fluffy. You will now add the ground almonds and the vanilla bean paste. You will then add the sifted flour in until it just mixed, you do not want to over mix, or overwork the dough. The cookies will not be very light in texture if you do.

Take about one teaspoon of dough in your hand at a time, and roll it into a ball. You will then place the rolled cookie dough balls on the parchment paper or an ungreased cookie sheet if you do not have parchment paper. You will then bake the cookies for 15-20 minutes. You will want to watch the first batch fairly closely and turn halfway through baking to ensure even cooking. You want to make sure to get them cooked but not too brown. Once the cookies are done you will remove from the oven, and cool the cookies for about five minutes, and then roll in the left over confectioners sugar.

You will then hold these little delicate cookies until you are ready for service.

How to Make No Bake Chocolate Oatmeal Cookies

No Bake Oatmeal Chocolate Cookies are a great easy cookie recipe that's perfect anytime of year, especially during the summer when it's too hot to turn on the oven.  They stir together in minutes using a handful of common pantry ingredients.

This recipe for no bake cookies was part of my childhood and may have been part of yours too. It's an old-fashioned recipe that has been around for decades, goes by many different names, and has lots of variations.

Butter Cookie Recipe

Some recipes endure and these no bake oatmeal chocolate cookies are a perfect example. It's amazing how just reading a recipe can transport you back to the past.

Many versions of this recipe call for 2 cups of sugar, which I find to be too sweet. This version uses 1 1/2 cups instead. 

Although this recipe for no bake cookies is quick and easy, a few helpful hints are in order. First, be sure to follow the directions exactly, boiling the mixture for 1 1/2 minutes. If you don't boil the sugar mixture long enough the cookies may not get firm and if you boil it too long they are apt to be grainy and dry.  And I've had success making these with both quick cooking and old-fashioned oats, so you are safe using whichever is in your cupboard.   

No Bake Chocolate Oatmeal Cookies Recipe

Ingredients

6 tablespoons unsweetened cocoa powder
1 1/2 cups sugar
1/2 cup butter
1/2 cup milk
1/2 cup creamy peanut butter
1 teaspoon vanilla
3 cups rolled oats, uncooked

Directions

Clear an area on your counter and line it with waxed paper for dropping the cookie mixture on. Alternatively you can line a cookie sheet with waxed paper or a silicone mat.

In a medium heavy bottomed saucepan over medium heat, combine the cocoa, sugar, butter, and milk. Bring the mixture to a boil and continue to cook for 1 1/2 minutes while stirring constantly. Make sure the mixture is boiling vigorously (with bubbles all over the surface) before beginning to count the time.

Remove pan from the heat and stir in the peanut butter and vanilla until creamy and well blended.  Add the oats and stir until thoroughly combined.

Drop by teaspoonfuls onto the waxed paper or lined cookie sheet.  I like to use a small cookie scoop when making drop cookies - it speeds up the process and gives the cookies a uniform appearance.

Let cool until firm, about 1 hour. You can speed this up by transferring the cookies to the refrigerator.

Makes about 3 dozen No Bake Chocolate Oatmeal Cookies

No Bake Chocolate Oatmeal Cookies Variations:

Use crunchy peanut butter instead of smooth for added crunch. Stir in 1/2 cup shredded coconut with the oats. Stir in 1/2 cup chopped nuts with the oats. Stir in 1/2 cup dried cranberries or raisins with the oats. To make larger flatter cookies, drop by tablespoons and then flatten slightly with the back of the spoon or your damp fingers. For cookie bars, press the mixture into a well greased 8-inch square pan. When firm, cut into desired size and shape bars.

Shortening, Butter or Margarine - What is Best for Baking Cookies?

There is so much controversy about what is best to use for baking cookies. You may find yourself scratching your head trying to figure out this dilemma. Which one is healthier to use than the other? With a little research we can solve this dilemma.

First, what is shortening? It is a semisolid fat and refers to a hydrogenated vegetable oil. There is so much controversy about what is best to use for baking cookies. You may find yourself scratching your head trying to figure out this dilemma.Hydrogenation is a process of bubbling hydrogen through vegetable oil, changing its chemical structure. This process turns the liquid to a solid at room temperature and below. Shortening is 100% fat. Butter and margarine contain 80% fat. Hydrogenation produces trans fats, which are the unhealthy fats known to cause heart disease. The advantage of shortening over butter or margarine is its smoke point (higher temperature before burning). Another advantage is its has a higher melting temperature. During the baking process of cookies it helps dough hold its shape longer. This allows the flour and eggs to set, keeping the dough from spreading too much. There are some new shortening products on the market that contain no trans fats or very little.

Second, what is margarine? Margarine is again made from vegetable oils and contains no cholesterol. Margarine is high the in good fats (polyunsaturated and monounsaturated), but contains some saturated fats. Some margarine is worse than others. Hydrogenation solidifies the margarine. The harder the margarine the more trans fats it contains. Trans fat raise levels of bad cholesterol and lower the levels of good cholesterols, which makes it worse than saturated fat. Tub margarine is lower in trans fats than stick margarine.

Third, we all know that butter is created from a dairy cow's milk cream fat. Being that, it is animal fat, which is loaded with saturated fat and cholesterol. Butter and margarine are equal in calories and fat. Each contains about 35 calories and 4 grams of fat per teaspoon. Butter is believed to contain traces of hormones and antibodies fed to the dairy cows. On the bright side butter contains fat-soluble vitamins A, D, E and K.

OK, now that you are confused now more than ever let's compare. Margarine is better than butter when it comes to our heart, but falls flat in the flavor department. Butter also adds a creamy texture. Shortening helps to keep your cookies from deflating or spreading out, but again it does not enhance the flavor. In fact shortening has no flavor. If you are a fluffy cookie fanatic use half shortening and half butter. You get the raised cookie with the buttery flavor.

Finally, what should you use, salted butter or unsalted butter. Salt in butter acts as a preservative, so butter won't turn rancid when left out at room temperature. The down side is you are adding extra salt to your recipe. The problem with reducing salt in a recipe to substitute for salted butter is different brands of butter has different salt contents. The rule of thumb is when using salted butter reduce the salt added ½ teaspoon per cup of salted butter. The purist baker will always use unsalted butter. That way they can be in control of the salt being added to the recipe. Salt in butter is also believed to add flavor, overpowering the sweet butter taste, and mask butter odor.

When it comes right down to the decisions between shortening, margarine, salted butter or unsalted butter is a personal preference. But at least with information we can make an informed decision. The best way to decide what is best for you is experiment. Try different ways to bake cookies and have fun. As they say, "The journey is the best part of the trip."
