1 1/2 cups gumdrops 3/4 cup walnuts, coarsely chopped 1/2 cup golden raisins 1 3/4 cups all purpose flour, divided 1/2 cup shortening 1 cup packed brown sugar 1 egg 1/4 cup buttermilk 1/2 teaspoon baking soda 1/2 teaspoon salt Directions Preheat oven to 400 degrees. Take out all of the black gumdrops and store for another use. Cut the remaining gumdrops into small pieces. Place gumdrops into a bowl. Add in the walnuts, raisins and 1/4 cup flour; toss to coat. Set aside. In a mixing bowl, cream shortening and brown sugar. Add egg; beat in buttermilk, flour; stir into creamed mixture. Add gumdrop mixture and mix well. Chill for 1 hour. Drop by rounded teaspoonfuls 2-inches apart onto ungreased baking sheets. Bake at 8 to 10 minutes. Let cool . Here's a serious Christmas cookie; it's white like snow, has a little red Christmas color in it, and it's full of fat, like Santa. How could you go wrong? It's also sweet with a crispy texture, and has a hint of almond flavor. This recipe comes from my grandma. She's been making these cookies at Christmas time for as long as I can remember Christmases. The funny thing is she brings these to Christmas every year but I refused to try them til about two years ago. I think I was afraid of the cherry piece in the middle. So I'm here to tell you don't be afraid, they're good, even if you don't like cherries. Be brave this year and try that Christmas cookie that looks weird and has too many nuts stuck to it, you just might like it. |

Tip: to crush cereal use a food processor or place cereal in sealed bag and crush with a rolling pin. These cookies also freeze well. 1/2 cup butter
Cream butter and cream cheese until fluffy. Mix in sugar and almond extract until smooth. In a separate bowl mix flour, baking powder and salt. Add flour to butter and cream cheese mixture. Stir until just combined. Chill dough 1-2 hours until firm. Roll chilled dough into 3/4 inch balls. Roll balls in crushed cereal. Slightly push cherry piece into middle of ball. OATMEAL RAISIN DROP COOKIES 1 cup all-purpose flour 1 cup uncooked rolled oats 1 tsp baking powder 1 tsp ground cinnamon 1/2 tsp ground nutmeg 1/2 tsp baking soda 1/8 tsp ground cloves 3/4 cup frozen apple juice concentrate, thawed 3 tbsp egg substitute 2 tbsp margarine, melted 2 tsp vanilla 1/2 cup raisins Preheat oven to 375 degrees. Spray baking sheets with nonstick cooking spray. Combine flour, oats, baking powder, cinnamon, nutmeg, baking soda, and cloves in a large bowl. Combine remaining ingredients in a medium bowl; blend well. Add to dry ingredients; blend well. Cover and refrigerate for 20 minutes. Remove from refrigerator and drop 2 tablespoonfuls dough 2 inches apart onto prepared baking sheets. Bake 20 minutes or until lightly browned. Cool completely on wire racks. Yield: 28 cookies ORANGE DROP COOKIES 1 cup butter, softened 1 1/2 cups Splenda 1/2 cup sugar 3 eggs 1/3 cup unsweetened orange juice 1 tbsp grated orange peel 4 cups flour 2 tsp baking powder 1 tsp baking soda In a mixing bowl, cream butter, sugar, and Splenda together. Beat in eggs, orange juice, and orange peel. Combine the flour, baking powder, and baking soda. Gradually add the flour mixture to the creamed mixture and mix well. Drop by teaspoonfuls 2-inches apart onto greased baking sheets. Bake at 350 degrees for 12 to 14 minutes or until edges begin to brown. Remove to wire racks to cool. Easy Christmas Cookie Recipes - One Recipe with Many Variations
There are so many Christmas cookie recipes around but often so little time to bake during the busy holiday season.
The solution? A great tasting basic cookie recipe that quickly and easily turns into such a variety of easy to make Christmas treats, friends and family will think you poured over all your favorite Christmas cookie recipes.
Let's start with the basics.
Basic Cookie Dough Recipe
1/2 cup (or 1 stick) butter (or margarine) at room temperature
1/2 cup brown sugar, lightly packed
2 tablespoons sugar
1/2 teaspoon baking powder
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
In a large bowl, combine all the ingredients except the flour. Beat with an electric mixer, scraping the sides of the bowl several times, until the mixture is light and fluffy. With mixer at a low speed, add the flour gradually, beating just until everything is well blended.
Place the mixture on a baking sheet using a tablespoon measure and press down with a spoon to flatten a bit. Or roll our and cut into shapes with a cookie cutter. Bake at 350ºF for about 12 to 15 minutes, until golden.
This basic cookie mixture is also the base for the following cookie recipes (all baked in a preheated oven at 350ºF).
Orange Cookies
(Makes about 32)
Add 1 tablespoon of grated orange zest to the recipe. Shape into a log that is about 1 1/2" in diameter and refrigerate for 4 hours.
Slice dough into 1/4" thick slices. Place on cookie sheet. Cookies can be decorated with candies, rolled in colored sugar, or cut into pretty holiday shapes before baking. Bake in preheated oven for 12-15 minutes, until lightly browned.
Cherry Coconut Chocolate Squares
(Makes about 54 squares)
In addition to the basic dough you will need:
1/4 cup unsweetened cocoa powder
3 large eggs
1 1/2 cups granulated sugar
1 teaspoon almond extract
1/2 teaspoon baking powder
3 cups flaked coconut
1/2 cup maraschino cherries, well drained and coarsely chopped
Line a 13"x9" baking pan with foil.
Stir cocoa powder into basic dough mixture. Press evenly into the prepared pan. Bake for 10-15 minutes or until the crust looks dry.
In a medium bowl whisk together eggs, sugar, almond extract and baking powder until well blended. Stir in coconut and cherries. Pour over the baked crust.
Bake for 30-35 minutes, until top just begins to brown and a toothpick inserted near the center comes out clean. Cool in the pan on a wire rack. Lift it out on to a cutting board using the foil ends and cut into 1 1/2" squares. Squares can be stored in an airtight container for up to 3 weeks.
Coconut Pineapple Cookies
(Makes about 36)
In addition to the basic dough you will need:
1 1/2 cups sweetened flaked coconut
1/3 cup pineapple preserves (use raspberry or apricot if you prefer)
Add 1 cup of the flaked coconut to the basic dough mixture and mix well. Shape the dough into 1 1/2" balls and roll in the remaining coconut to coat them. Place the balls 1" apart on lightly greased cookie sheets. Make a deep indentation in the center of each cookie with your fingertip.
Bake for 12-15 minutes until the cookie is firm and the coconut is lightly toasted. When cooled, fill each hole in the center of the cookies with the preserves.
You can vary this basic dough to make a wide variety of Christmas cookie recipes. Add other flavorings like maple, ginger or cinnamon. Add chopped dried fruits like apricots or dates. Or bake them plain in holiday shapes and decorate with colored icing.

Best Christmas Cookie Recipes - Peppermint Pinwheel Cookies
A zesty cookie that resembles a pinwheel.
3/4 cup butter, softened
Cookie Recipe
3/4 cup sugar
1 egg yolk
1 teaspoon vanilla extract
2 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon peppermint extract
1/4 teaspoon red liquid food coloring
Directions
Preheat oven to 350 degrees.
Prepare baking sheets with nonstick cooking spray.
In a large bowl, cream the butter and sugar. Beat in the egg yolk and vanilla. Couple the flour, baking powder and salt; slowly add to the creamed aggregate and mix well.
Divide the dough in half and add the passage and red food coloring to one section.
Take four sheets of wax paper and roll out each part of dough between two sheets. Roll dough into a 16x10-inch rectangle. Remove waxed paper.
Place the red rectangle over plain rectangle and roll up tightly (jelly roll style), beginning with a long side. Wrap in plastic wrap. Refrigerate overnight or until firm.
Unwrap the dough and cut into 1/4-inch slices. Place 2-inches apart onto prepared baking sheets. Bake for 12 to 14 minutes or until set. Cool completely.

Directions

First you should preheat your oven to 350 degrees and then get your ingredients ready. Here is a list of the ingredients you will need:
Cookie Recipe
2 cups of all purpose flour
1 cup butter or margarine
2 large eggs
1 cup white sugar
1 cup tightly packed brown sugar
2 teaspoons baking soda
½ teaspoon salt
1 cup creamy peanut butter
1 cup semi sweet chocolate ships
1 cup crushed nuts
1 teaspoon vanilla
In a large mixing bowl, start by creaming together your butter or margarine and your peanut butter. You can do this by hand or with hand mixer. Your butter or margarine should be room temperature so that it is easier to mix. When creamy add both your white and brown sugar and mix until smooth. Next, add your eggs and mix well.
Once the blend is creamy again, add your flour, baking soda, salt, and vanilla and mix together. Finally, you will need to add your nuts and your chocolate chips and mix well. The blend will be very stiff. When mixed roll the dough into small balls by hand and place on a large baking sheet. In a small bowl put a half to a quarter cup sugar and flatten your balls of dough with a glass dipped into sugar. You will need to redip the glass after every cookie. Then bake for 12 minutes at 350 degrees.
For something separate while using this formula add a cup of M and M's. You can do this on top of the ingredients listed above or you can substitute the M and M's for the crushed nuts. You can also use white chocolate, peanut butter, or butterscotch chips as a substitution or in addition to the above ingredients!

Cookie Recipe
Preheat oven to 350 degrees.
Line 2 large baking sheets with parchment paper; set aside.
Combine the cake mix, eggs, butter, brown sugar, and cocoa powder in a bowl; stir to combine. Fold in the butterscotch chips and walnuts. Drop by level tablespoonfuls onto the prepared baking sheets. Oatmeal Caramel Chewy Bar Cookies
1 3/4 cup quick cook oats
1 1/4 cups all-purpose flour
1/2 cup whole-wheat flour
3/4 cup packed brown sugar
1/2 tsp baking soda
1/4 tsp salt
3/4 cup butter, melted
1 pkg (12-oz) semi-sweet chocolate chips
1 cup chopped pecans
1 cup caramel ice cream topping
Preheat oven to 350 degrees.
Spray the lowest of a 9 x 13-inch baking pan; set aside.
Combine the oats, 1 cup of the all-purpose flour, the whole-wheat flour, sugar, baking soda, and salt in a large bowl. Stir in butter; mix well. Keep 1 cup of the mixture and press the remaining mixture onto the lowest of the prepared pan. Bake at 350 degrees for 12 to 15 minutes until golden brown.
Remove the crust from the oven and sprinkle the chocolate chips and pecans over the crust.
In a small bowl, mix the caramel topping with the remaining all-purpose flour. Drizzle the mixture over the nuts and chocolate chips to within 1/4-inch of the edge of the pan. Sprinkle the reserved cup of the oat mixture over all.
Bake for someone else 18 to 22 minutes until golden brown. Cool in the pan on a wire rack. Cut into 30 bars.

Directions
Preheat oven to 375 degrees.
Place butter in a bowl and cream until nice and fluffy. Slowly beat in sugar and brown sugar until light and fluffy. Mix in the milk and vanilla. Add in flour; mix thoroughly. Chill dough for 1 to 2 hours or until it is easy to handle.
Work with 1/3 of the dough at a time and leave rest in the refrigerator until ready to use.
On a lightly floured surface, roll out dough to 1/4-inch thickness. Take a Santa shaped cookie cutter and dip it into flour, then cut out Santa faces. Place cookies on an ungreased cookie sheet.

Prepare the royal icing agreeing to box directions. Color half the icing red and leave the other half the original color. Using a icing bag or plastic bag with a hole cut in it, pipe a red Santa hat on each cookie. Follow up with white icing for Santa's beard, eyes and hat pompom.
Place a candy garnish in the town of each white eye. Allow icing to set before serving.

Bake 10 to 12 minutes, or until edges are lightly browned. Press a chocolate kiss candy piece into each cookie center, while cookies are still warm. Let cool.

The Cookie Swap - A collection of Christmas Cookies in One Afternoon
My daughter and I love baking so when the holidays come we find it quite fun to originate a variety of cookies to have Christmas Day. We also love to give away as gifts to citizen that we are thankful for a box full Christmas Cookies.
A few years back my daughter and I baked and baked and then gave a variety of Christmas cookies to our friends. It took us several weeks to accomplish this task as we wanted the variety of cookies. We had poured over cookie recipes to conclude which yummy cookies to make. We chose some popular cookie recipes like a chocolate chip cookie recipe, our best sugar cookie, a peanut butter, a spritz, and a ginger cookie. We then looked at new ones as we wanted the top cookie recipes! We looked at other recipes for gingerbread, recipes for thumbprint cookies, a lemon cookie, a chocolate cookie recipe and you can't forget about oatmeal cookies. When all was said and done we no ifs ands or buts had some great Christmas cookie recipes.

Then we compiled this huge shopping list for the ingredients they required. When we got all our materials together the baking began. This was going to take several weeks. So the Christmas Carols were on and the baking began. My daughter and I had a good time baking up her favorites a chocolate chip cookie recipe and the sugar cookies--best part was the cookie decorations. Easy Peanut Butter Cookie Recipe

1 cup peanut butter
1/3 cup Splenda Brown Sugar Blend
1 egg, beaten
1/2 cup milk
1 tsp vanilla
1/2 cup sugar-free chocolate chips
Preheat oven to 350 degrees.
Coat an 8-inch square baking pan with nonstick cooking spray; set aside.
On a large sheet of waxed paper integrate the all-purpose flour, whole-wheat flour, baking soda, and salt; stir together with a fork. In a bowl, mix together the peanut butter, Splenda Brown Sugar Blend, and eggs; stir vigorously until creamy. Add the milk and vanilla. Stir until smooth; add the flour mixture, stirring until well combined. Stir in the chocolate chips.
Spread the dough evenly into the prepared baking pan; pat down smooth. Bake at 350 degrees for 15 minutes or until very lightly browned at the edges. Do not over bake; or your bars will be too dry. Remove from oven and let cool 10 to 15 minutes before cutting into bars.

18 large marshmallows, halved
Frosting:

1 pinch salt
4-6 tablespoons milk

2 x medium bowls

Mixer
Step 1: Preheat oven to 350 degrees F.
Step 2: In a medium bowl, whisk together the flour, cocoa, baking soda, and salt; set aside.
Step 3: In a large bowl, with an electric mixer set on medium-high speed cream together the shortening and sugar.
Step 4: Beat in egg, milk, and vanilla extract.
Step 5: Gradually beat flour mixture into the creamed mixture.
Step 6: Drop by teaspoons 2 inches apart onto ungreased cookie sheets.
Step 7: Bake for 8 minutes, remove from oven and place a halved marshmallow, cut side down, onto each cookie. Return to oven and bake for 2 more minutes. Immediately transfer cookies to a cooling surface.
Frosting:
Step 1: In a medium bowl, cream butter, sugar, cocoa, and salt with an electric mixer.
Step 2: Add enough milk to achieve spreading consistency.
Step 3: Frost cooled cookies.
Makes 36 cookies.

Best Chocolate Chip Cookie Recipe
Take advantage of what many call the best chocolate chip cookie recipe. It's easy to make and taste absolutely wonderful.
INGREDIENTS
Butter Cookie Recipe
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¾ cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1-tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips
DIRECTIONS
Here's how to prepare your Best Chocolate Chip Cookie Recipe:
Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets or line with parchment paper.
Sift together the flour, baking soda and salt; set aside.
In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough ¼ cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

* 1 cup (2 sticks) (226 grams) unsalted butter, room temperature
* 1 cup (200 grams) granulated white sugar
* 1 cup (215 grams) firmly packed light brown sugar
* 2 large eggs
* 2 teaspoons pure vanilla extract
* 3 cups (420 grams) all-purpose flour
* 1-teaspoon baking soda
* ¼ teaspoon salt
* 1 1/2 cups (270 grams) semisweet chocolate chips
Note: Can add 1 cup of toasted and chopped nuts (pecans or walnuts).
Preparation:
Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Set aside.
In the bowl of your electric mixer (or with a hand mixer), cream the butter. Add the white and brown sugars and beat until fluffy (about 2 minutes). Beat in eggs, one at a time, making sure to beat well after each addition. Add the vanilla and beat until incorporated.
In a separate bowl, combine flour, baking soda, and salt. Add the dry ingredients to the egg mixture and beat until incorporated, adding the chocolate chips about half way through mixing. If you find the dough very soft, cover and refrigerate until firm (about 30 minutes).
For large cookies, use about a 2-tablespoon ice cream scoop or with two spoons, drop about 2 tablespoons of dough (35 grams) onto the prepared baking sheets. Bake about 12 - 14 minutes, or until golden brown around the edges. Cool completely on wire rack.

This is The Best Chocolate Chip Cookie Recipe Ever
I know it's a big call but I think I've got this right. You want to know it don't you? If your answer is yes then you can classify yourself as a self confessed chocolate chip cookie addict. A real life cookie monster. OK here it is:
The Recipe
Easy Peanut Butter Cookie Recipe
1/4 cup brown sugar
1/8 cup honey
1/8 cup butter
1/8 cup natural peanut butter
1/2 banana, mashed
1 teaspoon vanilla extract
5/8 cup whole wheat flour
1/8 cup oat bran
1/2 cup rolled oats
1/4 teaspoon baking soda
1/8 teaspoon salt
1 pinch pumpkin pie spice
1/2 cup dried cranberries
1/2 cup semisweet chocolate chips
2 tablespoons sunflower seeds
DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together the brown sugar, honey, butter and peanut butter until smooth. Stir in the banana and vanilla. Combine the whole wheat flour, oat bran, oats, baking soda, salt and pumpkin pie spice in a separate bowl. Stir the dry ingredients into the wet ingredients until it forms a smooth dough. Mix in the cranberries, chocolate chips and sunflower seeds. Drop by spoonfuls onto an ungreased baking sheet.
Bake for 10 to 12 minutes in the preheated oven, until cookies are lightly browned at the edges.

Although this chocolate chip cookie recipe is not the most basic, I have tried an awful lot before I settled on this one as my favorite. Try it I know you'll agree. You will note that I have used dark chocolate chips because I really have a preference for dark chocolate. My kids prefer a sweeter version but I reserve the above recipe as a secret adult one! Once I even made my own dark chocolate by using the very best ingredients I could find. I took a special chocolate making class where I learned the basics. (Yes I'm a real freak!), and then concocted the most exquisite chocolate imaginable then promptly ate most of them just keeping a few pieces which I used in the cookie mix above. It really complemented the cranberries. I have left out the chocolate making part as I think you will find equally good chips in the right stores.

I love cookies. I love everything about cookies. I love the shape and the smell and the taste of cookies. I've eaten all kinds of cookies - store bought cookies, Christmas cookies, really BIG cookies, and cookies I baked myself. None, however, can compare to my Little Gram's Chocolate Chip Cookies - the greatest of all cookies.
These cookies are made with chocolate chips, crushed peanuts, brown sugar, shortening, flour, baking soda, and four eggs. All these ingredients are mixed together, molded into about 60 raw cookies, and baked at 400 degrees for thirteen minutes. Believe it or not, this simple formula makes the perfect chocolate chip cookie. They're practically a food group.
Easy Peanut Butter Cookie Recipe
To properly eat this circular blob of perfection, I perform the "Ritual of the Perfect Cookie." First, I get a large glass of milk. Then, I take the red, slightly dented cookie-filled tin and slowly remove the lid. Inside lay the precious delights. I look for the best one to eat first; its about an inch in diameter and speckled with chocolate chips and peanut chunks. Smiling, I baptize it in the milk and swallow it whole. I eventually consume as many as my mortal body can hold. This is my ritual for eating my Little Gram's Chocolate Chip Cookies.
When I am eating her cookies I taste sensations that I never dreamed possible. Waves of deliciousness orally enter me, spreading rapidly through my body, and I experience a burst of energy unknown to most humans. It sounds as if I am exaggerating, and maybe I am...just a little, but my Little Gram's are the best darn cookie I've ever eaten. One ingredient of the cookie I failed to mention is also the most important: love. My great grandma's love gives the cookies shape, taste, character, and that's why Little Gram's Chocolate Chip Cookies - are the greatest of all cookies.
Little Gram's Chocolate Chip Cookies
4 eggs
1 lb of flour
1/2 lb of brown sugar
1 cup of chopped peanuts
6 oz. of chocolate chips
1/2 of shortening
1/4 tsp of baking soda
1/4 tsp of baking powder
Beat shortening then add sugar. When light and fluffy, add eggs. When fluffy add flour and beat. When it gets too heavy for beater add flour by hand. Add nuts and chips. Bake at 14 minutes at 375 or 13 minutes at 400 according to which is best for your stove. Makes approx 60 cookies.
