Cookie Recipes You Can Make Even When You Don't Have a Lot of Time

Busy, busy, busy. It seems we are all busy these days yet we still love homemade cookies. The recipes in this description will help you serve yummy homemade cookies to your house and friends even though you are a busy person. These cookies are also great for bake sales and homemade food gifts. And the good thing about homemade cookies is that you have control over the ingredients you use, thus allowing your house to often enjoy healthier cookies than what you buy. For instance, in the Butterscotch Cookies you could use a reduced-sugar or sugar-free cake mix, Splenda Brown Sugar Blend instead of the brown sugar, egg substitute instead of the eggs; you get the idea. You can adjust your ingredients to suit your family's dietary needs.

Easy Butterscotch Cookies
1 pkg (18 1/2-oz) yellow cake mix
2 eggs
1 stick unsalted butter, melted
1/4 cup firmly packed dark brown sugar
1 tbsp unsweetened cocoa baking powder
1 cup butterscotch chips
1/2 cup chopped walnuts*

Preheat oven to 350 degrees.
Line 2 large baking sheets with parchment paper; set aside.

Combine the cake mix, eggs, butter, brown sugar, and cocoa powder in a bowl; stir to combine. Fold in the butterscotch chips and walnuts. Drop by level tablespoonfuls onto the prepared baking sheets. Bake at 350 degrees for 14 minutes. Allow to cool a join of minutes on the pans then take off to wire racks to cool completely. Repeat until all batter is used.

Yield: roughly 3 1/2 dozen cookies

Oatmeal Caramel Chewy Bar Cookies
1 3/4 cup quick cook oats
1 1/4 cups all-purpose flour
1/2 cup whole-wheat flour
3/4 cup packed brown sugar
1/2 tsp baking soda
1/4 tsp salt
3/4 cup butter, melted
1 pkg (12-oz) semi-sweet chocolate chips
1 cup chopped pecans
1 cup caramel ice cream topping

Preheat oven to 350 degrees.
Spray the lowest of a 9 x 13-inch baking pan; set aside.

Combine the oats, 1 cup of the all-purpose flour, the whole-wheat flour, sugar, baking soda, and salt in a large bowl. Stir in butter; mix well. Keep 1 cup of the mixture and press the remaining mixture onto the lowest of the prepared pan. Bake at 350 degrees for 12 to 15 minutes until golden brown.

Remove the crust from the oven and sprinkle the chocolate chips and pecans over the crust.

In a small bowl, mix the caramel topping with the remaining all-purpose flour. Drizzle the mixture over the nuts and chocolate chips to within 1/4-inch of the edge of the pan. Sprinkle the reserved cup of the oat mixture over all.

Bake for someone else 18 to 22 minutes until golden brown. Cool in the pan on a wire rack. Cut into 30 bars.
