Sometimes the meal has been heavy or it is so hot one just wants a lighter refreshing dessert. For those times we recommend the following recipes: Fruit Luau is a refreshing dessert of fruit and ice cream. In keeping with the Hawaiian theme, the Hawaiian-Style Dessert is an easy dressed-up tapioca pudding. I recommend my late mother's recipe for an easy Fruit Pizza as a good way to get the kiddos to eat fresh fruits and berries. The Apple Dessert is probably not as light but is a good cake-like dessert you can enjoy without frosting. All are yummy desserts! |

FRUIT LUAU
Divide the fruit cocktail into 4 small dessert dishes. Top with a scoop of vanilla ice cream. Lay a pineapple ring over the ice cream. Fill pineapple center with whipped cream and top with a strawberry. DREAMY HAWAIIAN-STYLE DESSERT
Prepare the pudding mix according to the package directions. Set aside to cool for 15 minutes. Stir the pudding well and then spoon evenly into 4 dessert dishes. Chill. Drain the pineapple well, reserving 1/3 cup juice. Cut the pineapple slices in half. Melt the butter in a skillet and add the brown sugar, stirring until softened. Gradually add the reserved pineapple juice while stirring constantly. Add the pineapple and the coconut and bring mixture to a boil. Reduce the heat and just simmer for 4 minutes. Serve the pineapple warm over the pudding. MY LATE MOM'S EASY FRUIT PIZZA
Completely cover a pizza pan with the cookie dough and bake it according to the package directions. Cool completely. Beat the cream cheese, sugar, and vanilla together until creamy and smooth. Spread mixture over top of the cooled pizza cookie. Arrange the fresh fruit in a pretty fashion over the top of the cream cheese mixture. Chill before serving to allow the cream cheese layer to set. EASY APPLE DESSERT
Preheat oven to 375 degrees. Spray an 8 X 8-inch baking pan or dish with a nonstick cooking spray. Empty the can of pie filling into the bottom of the pan. Sprinkle the dry cake mix evenly over the pie filling. Cut the butter into portions and dot over the top of the cake mix. Sprinkle the cinnamon evenly over the top (may use more cinnamon or apple pie spice, if desired). Bake at 375 degrees for 40 to 45 minutes. This is great served as is. Delicious Recipes Made With Peanut Butter
Peanut butter is usually a favorite food from childhood through adulthood. All the recipes in this article have that special ingredient, so you know they have to be good! Yummy! The PB Ripple Brownies are made with a boxed mix so they easy to prepare and the Marshmallow Pudding goes together in minutes. Want a good healthy yet tasty bread recipe? Try the bread recipe below. With oats and whole-wheat flour in the ingredients along with the p. butter, you have quite a healthy combination. You can make it even healthier and suitable for diabetics by substituting Splenda Granulated for the granulated sugar!
PB RIPPLE BROWNIES
3/4 cup sugar
1/2 cup peanut butter
1/4 cup all-purpose flour
2 eggs
1 boxed brownie mix with chocolate syrup
1/4 cup water
1/4 cup canola oil
2 eggs
Preheat oven to 350 degrees. Grease the bottom only of a 9 x 13-inch baking pan; set aside.
In a small mixing bowl, with mixer on medium speed, beat together the sugar, p. butter, flour, and eggs for a couple of minutes or until blended. Set bowl aside.
In a medium mixing bowl, stir together the brownie mix, syrup, water, canola oil, and eggs. Stir until well blended. Spread the brownie mixture onto the bottom of the prepared pan. Drop the sugar mixture onto the batter by the tablespoonfuls. Swirl a knife through the batters.
Bake at 350 degrees for 40 minutes. Allow to cool completely on a wire rack. If desired, frost by adding 1/3 cup peanut butter and approximately 2 teaspoons of milk to a can of vanilla frosting. Sprinkle with chopped peanuts if desired.
Yield: 48 brownies
PEANUT BUTTER MARSHMALLOW PUDDING
1 jar (7-oz) marshmallow creme
1/4 cup milk
1/2 cup chunky peanut butter
1 container (8-oz) plain yogurt
mini chocolate chips for garnish, if desired
Melt the marshmallow creme with the milk over low heat, stirring until smooth. Add the peanut butter and stir until smooth. Remove the mixture from the heat and allow to cool. Fold in the yogurt and pour into 4 small individual dessert dishes. Chill. Garnish with the mini chocolate chips, if desired.
Yield: 2 cups or 4 1/2 cup individual servings.
PEANUT BUTTER BREAD
1 cup all-purpose flour
1/2 cup whole-wheat flour
1 cup quick oats
1 cup sugar
1 tbsp baking powder
1/2 tsp salt
3/4 cup chunky peanut butter
1 egg
1 cup milk
1 tsp vanilla extract
Preheat oven to 350 degrees.
Grease a 9 x 5 x 3-inch loaf pan; set aside.
In a 2-quart bowl, combine the flour, oats, sugar, baking powder, and salt. Cut in the peanut butter until crumbly. Combine the egg, milk, and vanilla; stir into the flour mixture just until moistened.
Pour the batter into the prepared loaf pan and bake at 350 degrees for 55 minutes to an hour or until a wooden toothpick inserted near the center comes out clean. Remove from oven and cool in pan for 10 minutes. Remove from pan to a wire rack to cool completely.

Delicious Peanut Butter Dessert Recipes for Your Family and Friends
Peanut butter is a staple in many diets. In fact, every diabetic should have peanut butter daily. Peanut butter is one of the ways I am able to keep my diabetes in control. In fact, the pudding recipe also includes diabetic instructions. When you and your family enjoy sweets, be sure to include peanut butter desserts often. And here are some delicious recipes to help you with this! If you don't want to make the usual PB cookies, try this recipe for Crunchy PB 'Roons. These little cookies use only egg whites, a small amount of sugar, peanut-butter, cereal and peanuts.
CRUNCHY PEANUT BUTTER 'ROONS
Easy Peanut
2 egg whites
1/8 tsp cream of tartar
dash of salt
1/2 cup sugar
1/2 cup creamy peanut butter
2 cups chocolate-flavored crispy rice cereal
1/3 cup chopped honey-roasted peanuts
Preheat oven to 300 degrees.
Lightly grease 2 cookie sheets or line them with parchment paper; set aside.
In a medium mixing bowl, beat the egg whites, cream of tartar, and salt on high speed of electric mixer until soft peaks form. (Soft peaks will curl over when the beaters are lifted.) Gradually add the sugar by tablespoonfuls at a time and beat until sugar is dissolved and stiff peaks form.
Gently fold the p butter into the egg whites. Fold in the cereal then drop mixture by rounded teaspoonfuls onto the prepared baking sheets. Place macaroons about 2-inches apart. Sprinkle with chopped peanuts.
Bake at 300 degrees for 10 minutes. Turn off oven and let cookies dry in the oven with the door closed for 15 minutes. Remove macaroons from the cookie sheets and cool completely on a wire rack.
Yield: Approximately 30 macaroons.
PEA. BUTTER BANANA PUDDING (Diabetic Instructions Included)
1 cup sugar*
3 tbsp all-purpose flour
dash of salt
2 large eggs, lightly beaten
2 cups milk
1 cup fat-free milk
2 tbsp butter
1 tsp vanilla extract
1/2 cup creamy peanut butter
1 pkg (9-oz) chocolate wafers***
4 med bananas, sliced
1 tub (8-oz) frozen whipped topping, thawed**
1/2 cup unsalted dry-roasted peanuts, chopped
In a heavy saucepan, combine sugar, flour, and salt; using a wire whisk, whisk in the eggs and milk. Cook, whisking constantly, over low heat until thickened; approximately 20-25 minutes. Remove from heat and stir in the butter and vanilla; set aside.
Spread 1/2 teaspoon peanut butter between 2 chocolate wafers to form a sandwich; repeat until all are used. Place the sandwich cookies in the bottom of a three-quart bowl and top with the sliced bananas. Pour the custard over the bananas; cover and chill for at least 4 hours before serving.
To serve, spread the whipped topping over the custard and sprinkle with the chopped peanuts.
*Diabetics substitute Splenda granular for the sugar.
**Diabetics substitute Sugar-Free whipped topping for the regular whipped topping.
***Diabetics use sugar-free chocolate wafers.

PEANUT BUTTER BUDDIES
Easy Peanut
1 cup creamy peanut butter
1 cup butter, softened
1 cup firmly packed brown sugar
2/3 cup light corn syrup
2 eggs
4 cups all-purpose flour, divided
1 tbsp baking powder
1 tsp cinnamon
1/4 tsp salt
In a large mixing bowl, with mixer at high speed, beat peanut butter, butter, brown sugar, corn syrup, and eggs until smooth. Reduce speed and beat in 2 cups flour, baking powder, cinnamon, and salt. With a wooden spoon, stir in the remaining flour. Wrap the dough and chill for 2 hours. On a floured surface, roll out half the dough to 1/8-inch thickness. Cut with floured cookie cutters, shapes of your choice. Bake on ungreased cookie sheets at 325 degrees for 10 minutes or until cookies are lightly browned. Cool on wire racks. Decorate if desired.
Yield: About 2 1/2 dozen cookies.
APPLE RAISIN NUT COOKIES
2 cups flour
1 tsp baking soda
1/4 cup milk
1 egg
1/2 cup shortening
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1 cup brown sugar
1 cup raisins
1 1/2 cups chopped apples
1 cup chopped pecans or walnuts
Preheat oven to 400 degrees.
In a large mixing bowl, sift together flour and baking soda; set aside.
Put milk, egg, shortening, salt, cinnamon, nutmeg, and brown sugar into a blender. Blend until smooth. Remove mixture from the blender and add to the flour mixture. Mix well. Add the raisins, apples, and nuts to the mixture; blend well. Drop by teaspoonfuls onto a greased cookie sheet. Box at 400 degrees for 10 to 12 minutes or until lightly browned.
Note: As when shipping any food items, package well and ship to arrive timely.
