Peanut Butter Pie is my absolute favorite dessert and the best restaurant dessert! The trouble is though, it is hard to find on many restaurant menus. I am finally introducing to the world my secret peanut butter pie recipe, formulated over the years and after tasting many different versions of the dessert. I've found that a chocolate crust is a must and the denser versions have always pleased my taste buds the most. The cream cheese in this recipe adds density and extreme richness. Peanut Butter Cream Cheese Pie 1 chocolate crust **
**Chocolate crust: In a heavy saucepan (low heat) melt 1/3 cup margarine or butter and 1 (6- ounce) package semi-sweet chocolate chips. Remove from heat; gently stir in 2 1/2 cups rice crispy cereal until completely coated. Press into bottom and up sides of a greased 9-10 inch pie plate. Chill 30 minutes. In a large bowl, beat cheese until fluffy; beat in condensed milk and peanut butter until smooth. Stir in vanilla. Fold in cool whip. Turn into crust. Drizzle syrup over top of pie and gently swirl with a spoon. Place in freezer until set (usually over night). I use a 10 inch quiche plate for this recipe, however a deep dish 9 inch plate will also work. It can be stored in the freezer for several weeks, so it is a great make ahead dessert. Some of the best restaurant desserts are make ahead desserts, because fresh desserts are costly for a restaurant to house. A restaurant would have to have a contract with a high quality bakery in the area or specialize in fresh homemade desserts to be able to present great tasting fresh desserts. Sometimes the meal has been heavy or it is so hot one just wants a lighter refreshing dessert. For those times we recommend the following recipes: Fruit Luau is a refreshing dessert of fruit and ice cream. In keeping with the Hawaiian theme, the Hawaiian-Style Dessert is an easy dressed-up tapioca pudding. I recommend my late mother's recipe for an easy Fruit Pizza as a good way to get the kiddos to eat fresh fruits and berries. The Apple Dessert is probably not as light but is a good cake-like dessert you can enjoy without frosting. All are yummy desserts! |

FRUIT LUAU
Divide the fruit cocktail into 4 small dessert dishes. Top with a scoop of vanilla ice cream. Lay a pineapple ring over the ice cream. Fill pineapple center with whipped cream and top with a strawberry. DREAMY HAWAIIAN-STYLE DESSERT
Prepare the pudding mix according to the package directions. Set aside to cool for 15 minutes. Stir the pudding well and then spoon evenly into 4 dessert dishes. Chill. Drain the pineapple well, reserving 1/3 cup juice. Cut the pineapple slices in half. Melt the butter in a skillet and add the brown sugar, stirring until softened. Gradually add the reserved pineapple juice while stirring constantly. Add the pineapple and the coconut and bring mixture to a boil. Reduce the heat and just simmer for 4 minutes. Serve the pineapple warm over the pudding. MY LATE MOM'S EASY FRUIT PIZZA
Completely cover a pizza pan with the cookie dough and bake it according to the package directions. Cool completely. Beat the cream cheese, sugar, and vanilla together until creamy and smooth. Spread mixture over top of the cooled pizza cookie. Arrange the fresh fruit in a pretty fashion over the top of the cream cheese mixture. Chill before serving to allow the cream cheese layer to set. EASY APPLE DESSERT
Preheat oven to 375 degrees. Spray an 8 X 8-inch baking pan or dish with a nonstick cooking spray. Empty the can of pie filling into the bottom of the pan. Sprinkle the dry cake mix evenly over the pie filling. Cut the butter into portions and dot over the top of the cake mix. Sprinkle the cinnamon evenly over the top (may use more cinnamon or apple pie spice, if desired). Bake at 375 degrees for 40 to 45 minutes. This is great served as is. Frozen Ambrosia Cream Squares Dessert Recipe
If you enjoy making frozen-style desserts for your family, I think you will enjoy this easy to make Ambrosia Cream Squares recipe.
This recipe is done in a 4 layer technique. Please read the entire list of ingredients needed before beginning the recipe. Once it has been completed, you will need to place it into the freezer for 2 to 4 hours before serving. If desired, you can garnish the top of it with some fresh pineapple slices or cherries.
Layer 1 Ingredients:
1/2 cup butter, softened
2 tablespoons brown sugar
1 cup all-purpose flour
1/2 teaspoon salt
In a large bowl, cream together the above ingredients in the order that they are given. Press the dough into the bottom of an 8 x 8" square baking pan that has been lightly sprayed with nonstick cooking spray. Bake in a 350 degree oven for 10 to 12 minutes, remove and set aside to cool.
Layer 2 Ingredients:
1/2 cup butter, melted
1 egg, well-beaten
3 cups confectioner's sugar
Melt the butter in the microwave or in a small saucepan. In a medium-sized bowl, combine the melted butter, beaten egg and confectioner's sugar together until creamy. Spread this mixture onto the cooled first layer in the baking dish.
Layer 3 Ingredient:
1 (20 ounce) can crushed pineapples
Drain all of the juice from the pineapples. Spread the crushed pineapples over top of the second layer of ingredients in the baking dish.
Layer 4 Ingredients:
1 package of Dream Whip
1/2 teaspoon vanilla extract
2 tablespoons confectioner's sugar
In a small mixing bowl, beat together the package of dream whip, vanilla extract and confectioner's sugar until creamy and smooth. Lightly spread this mixture on top of the third layer in the baking dish.
Cover the dish and place into the freezer. Once the dessert is firm, remove from the freezer and let stand at room temperature for 5 minutes. Cut into squares before serving.

Delicious Peanut Butter Dessert Recipes for Your Family and Friends
Peanut butter is a staple in many diets. In fact, every diabetic should have peanut butter daily. Peanut butter is one of the ways I am able to keep my diabetes in control. In fact, the pudding recipe also includes diabetic instructions. When you and your family enjoy sweets, be sure to include peanut butter desserts often. And here are some delicious recipes to help you with this! If you don't want to make the usual PB cookies, try this recipe for Crunchy PB 'Roons. These little cookies use only egg whites, a small amount of sugar, peanut-butter, cereal and peanuts.
CRUNCHY PEANUT BUTTER 'ROONS
Easy Peanut
2 egg whites
1/8 tsp cream of tartar
dash of salt
1/2 cup sugar
1/2 cup creamy peanut butter
2 cups chocolate-flavored crispy rice cereal
1/3 cup chopped honey-roasted peanuts
Preheat oven to 300 degrees.
Lightly grease 2 cookie sheets or line them with parchment paper; set aside.
In a medium mixing bowl, beat the egg whites, cream of tartar, and salt on high speed of electric mixer until soft peaks form. (Soft peaks will curl over when the beaters are lifted.) Gradually add the sugar by tablespoonfuls at a time and beat until sugar is dissolved and stiff peaks form.
Gently fold the p butter into the egg whites. Fold in the cereal then drop mixture by rounded teaspoonfuls onto the prepared baking sheets. Place macaroons about 2-inches apart. Sprinkle with chopped peanuts.
Bake at 300 degrees for 10 minutes. Turn off oven and let cookies dry in the oven with the door closed for 15 minutes. Remove macaroons from the cookie sheets and cool completely on a wire rack.
Yield: Approximately 30 macaroons.
PEA. BUTTER BANANA PUDDING (Diabetic Instructions Included)
1 cup sugar*
3 tbsp all-purpose flour
dash of salt
2 large eggs, lightly beaten
2 cups milk
1 cup fat-free milk
2 tbsp butter
1 tsp vanilla extract
1/2 cup creamy peanut butter
1 pkg (9-oz) chocolate wafers***
4 med bananas, sliced
1 tub (8-oz) frozen whipped topping, thawed**
1/2 cup unsalted dry-roasted peanuts, chopped
In a heavy saucepan, combine sugar, flour, and salt; using a wire whisk, whisk in the eggs and milk. Cook, whisking constantly, over low heat until thickened; approximately 20-25 minutes. Remove from heat and stir in the butter and vanilla; set aside.
Spread 1/2 teaspoon peanut butter between 2 chocolate wafers to form a sandwich; repeat until all are used. Place the sandwich cookies in the bottom of a three-quart bowl and top with the sliced bananas. Pour the custard over the bananas; cover and chill for at least 4 hours before serving.
To serve, spread the whipped topping over the custard and sprinkle with the chopped peanuts.
*Diabetics substitute Splenda granular for the sugar.
**Diabetics substitute Sugar-Free whipped topping for the regular whipped topping.
***Diabetics use sugar-free chocolate wafers.

Chocolate and Peanut Butter Cookie Dessert Pizza Recipe
Sometimes nothing else will hit the spot like peanut butter can do. Peanut butter has been around for a very long time and many people enjoy eating it. Many of them love making these recipes just to satisfy the craving for this smooth and buttery tasting comfort food. Of course, there is also a lot to be said about the decadence of chocolate and the wonderful recipes you can make with it. Now you can have them both together while eating a dessert pizza.
Recipe for Chocolate and Peanut Butter Cookie Dessert Pizza
Easy Peanut Butter Cookie Recipe
What You Need
1 cup butter flavored shortening 1 1/4 cups sugar 1 cup packed brown sugar 2 eggs 1 cup creamy peanut butter 1 teaspoon baking soda 1 teaspoon vanilla flavoring 1/2 teaspoon salt 2 cups flour 2 cups uncooked quick oats 1/4 cup butter flavored shortening 1 cup chocolate chips 1 cup peanut butter chips 1/2 cup sugar coated candies 1/2 cup diced cherries 1/2 cup raisins 1/2 cup flake coconut 1/2 cup slivered almonds 1/2 cup chopped walnuts or pecans 1/2 cup miniature marshmallows
How to Make It
Preheat your oven to 350 degrees Fahrenheit.
Using a large mixing bowl and an electric mixer you will add the shortening and then cream it on a low speed setting. While beating add 1 cup of sugar and the packed brown sugar, and then cream together until smooth and fluffy.
Add the eggs one at a time while creaming together with the shortening mixture. Add the peanut butter, baking soda, vanilla flavoring, and salt to this mixture and then beat for 2 or 3 minutes until it is well blended. Using a large spoon, you will gradually stir in the oats a little at a time until well combined.
Press this mixture onto an un-greased pizza pan or baking sheet evenly. Gently pinch up the sides as you go around the edges of the pan to form a rim. Place in the preheated oven to bake for about 18 to 20 minutes or until it is a nice golden brown. Remove from heat and allow the crust to completely become cool to the touch.
After the crust is cool add the sugar coated candies, cherries, raisins, coconut and nuts by sprinkling them over the pizza you are making. Arrange the miniature marshmallows and then set aside while you prepare the topping.
Using a small saucepan over a low heat, you will add the remaining shortening and allow it to melt slowly. Add peanut butter chips and chocolate chips to the saucepan and stir to melt and mix with the shortening. Remove from heat and allow this to cool for a short time. Stir to mix and then drizzle this peanut butter chocolate topping over the candy filling of your chocolate peanut butter dessert pizza.
Place in the refrigerator to chill overnight or for several hours before cutting into small serving wedges for your holiday party or as an everyday peanut butter snack.
