Low Carb Peanut Butter Cheesecake

The Ingredients

Easy Peanut

8 ounces of cream cheese 2 Tablespoons of Splenda or similar artificial sweetener 1/3 cup of unsweetened peanut butter packed 2 egg 8 ounces heavy whipping cream 5 ounces finely-grated Almonds 1/4 cup softened butter

The Directions

For the Crust: In a medium sized bowl, mix almonds and softened butter until they form a paste-like mixture. Next, press into a pie pan and place in refrigerator to let hardened.

For the Filling: Preheat Oven at 350°F. Using an electric mixer blend cream cheese on low speed in a mixing bowl. Add in the 2 tablespoons of Splenda or similar artificial sweetener and continue to beat until batter is nice and fluffy. Slowly add in unsweetened peanut butter. Next, beat in eggs one at a time and gently mix in the heavy whipping cream.

Pour the mixture into crust. Bake for about 40 minutes, or until the center is set. Let cool on wire rack and then chill in refrigerator until the cheesecake sets. Last but not least, serve and enjoy your Low Carb Peanut Butter Cheesecake.
