Eggnog Cheesecake Recipe

Ingredients

Butter Cookie Recipe

Crust:
1 cup crushed graham crackers
1/4 cup sugar
1/2 stick melted butter

Filling:
24 oz softened cream cheese
1 cup sugar
2 eggs
3 tablespoons all purpose flour
1 cup eggnog
2 teaspoons rum extract
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon

Directions

Crust:
Preheat oven to 325 degrees F. While oven is heating, grease a 9-inch springform pan. Combine the graham crackers and sugar in the pan while slowly pouring in butter. Use a fork to press this mixture to the bottom of the pan. Bake in the preheated oven for about 10 minutes and cool.

Filling:
Preheat oven to 425 degrees F. While oven is heating, combine cream cheese, sugar, eggs, flour, eggnog, rum, nutmeg and cinnamon in a food processor or blender. Blend the ingredients until the texture is smooth and creamy. When ready, pour the mixture into the cooled crust and bake in the preheated oven for another 10 minutes. After 10 minutes, lower the heat of the oven to 250 degrees F and bake for another 45 minutes, then cool before serving.
